When we heard that chef and owner Stephen Gillanders was opening another restaurant we were super excited! His first restaurant S.K.Y. which opened in 2017 in Pilsen is one of our favorites. Apolonia is a 5,300 square foot space, with 18 foot ceilings and was designed by his wife Seonkeung Yuk. Fun fact her initials spell out the name of the Pilsen restaurant S.K.Y. Apolonia is named after the chef's grandmother and focuses on European and Mediterranean cuisine. Apolonia is located at 2201 S. Michigan Ave and is now open daily from 5-10pm.
